Black Bean and Rice Burgers

After posting recipes of mug cakes, Oreo whoopee pies, and Oreo cupcakes, I thought it appropriate to post a healthy food. We do eat some healthy food around here. It’s not ALL about cupcakes…it’s just MOSTLY about cupcakes… But not today. Today, it’s about black beans and rice.

To tell you the truth, I was ready for this one to be a flop. It only has 4 ingredients: black beans, brown rice, onions, and zucchini. No egg. No salt. No bread crumbs. This is how it went down:

DSC_0616I rinsed some black beans and I steamed some brown rice.

I browned an onion and some zucchini.

I tossed in the a fore mentioned black beans and let them cook for a few minutes.

Then, I took 2/3 of the onion, zuchinni, bean party and tossed them into my Nutri bullet.

(By the way, thanks for the Nutri bullet, Mom, I use it every day.)

I was so excited! The mixture (even though it doesn’t look it in the picture) turned purple!

I mixed it with the rice.

Made cute little patties out of it,

And fried them in a non stick pan.

(Thanks, Mom, for the non-stick pan. I use it every day.)

My kids were drawn to the kitchen by the yummy smell,

but then looked at me questioningly when I told them what we were eating.

I don’t trick my kids with food, I always tell them what’s in their food.

I trick them other ways.

We gave it to 007 like a hamburger (we didn’t have any buns)

But, Cat ate it straight up.

She took one bite, looked at me and asked if there were more.

Oh. Yeah.

This one was a huge success. Everyone LOVED them.

Including Seamus.

I accidentally dropped part of one on the floor.

This one is adult, kid and dog approved.
